Carrot Cake Cupcakes with Cream Cheese Frosting

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 1/2 cups very finely shredded carrots (from about 4 medium carrots)*
  • 2/3 cup granulated sugar
  • 1/3 cup packed light-brown sugar
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 cup vegetable oil
  • 2/3 cup chopped pecans
Cream Cheese Frosting
  • 1/2 cup butter, softened (I like to use 1/4 cup unsalted, 1/4 cup salted)
  • 6 oz cream cheese, softened
  • 3 1/4 cups powdered sugar
  • 1/2 tsp vanilla extract
